I can suggest two places for upholstery:

Lee Brothers at Albion - I haven't used them personally, but when I worked for a car dealer this is where we sent cars for custom work - from leather interiors to custom boot fixtures. The quality is second to none, and they are very well priced. Our fleet salesman reckoned they did the best work in the country, and we had full leather interiors done for under $2000.

All Car Interiors at Windsor - I got the steering wheel recovered on my old car - they did a good job and fairly priced.
