I don't think that there's any guarantee that it will work if you put a new hard drive into the ps3 with all the backed up files on it.
When they detect a new hard drive has been fitted it asks to do a format but i haven't tried it so all i can say is best of luck, hope it works for you mate

worked like a dream, i now have a 500gb ps3.
to format the new hd you need to use a special program
and your trophies will be transfered too, just take heed to sonys warning that pops up when you do the backup,,,,,sync the server.

well mine is way out of warranty anyway, it was a 60gb, the very first version released, i couldnt do without ps1 and ps2 compatibility.
anyway to answer your question, it doesnt void warranty at all, sony are completely happy for you to upgrade hd, infact they even have instructions in the ps3 user manual explaining how to do the upgrade.

The wait was a pain, I had paid my 1k when I ordered in september expecting it in November then the release was moved back to March was not happy but it was worth the wait.
